Honey, Wax, Frames, and Bees
We keep a small number of hives and bottle each one on its own whenever possible, so every jar tastes like the exact hedgerows and fields our bees worked that season.
Keeping harvests separate allows the character of a particular colony, season, and local forage to remain distinct. The colour and flavour can change as different plants bloom around Thamesville and Chatham-Kent.
Honey availability is seasonal. Future farm education may include opportunities to learn more about pollinators and small-scale beekeeping.
Honey bees support much more than a jar of honey. They move through our gardens, fruit trees and surrounding forage, helping pollinate the plants that make the homestead productive. Keeping hives also teaches us to pay attention to weather, flowering cycles and the health of the local environment. Honey harvests depend on the bees and the season, so quantities are limited and never guaranteed. Available honey may be listed through our Produce Stand.
